Much like the mythological beast who guides the dead to the afterlife, wild mushrooms are the death-eaters of the deep woods, transforming decay into potent anti-inflammatory, antioxidant, immuno-modulating nourishment. We extract ours in maple syrup made the old way: wood-fired, in a steamy sugar shack by the Tilton family who has been doing it for 4 generations.
